Begun Bhaja (Baingan Bhaja)
Ingredients:
- 1 large eggplant (baingan/begun)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt to taste
- Mustard oil (or vegetable oil) for frying
Optional:
- A pinch of sugar (for a slight sweetness)
- A sprinkle of chaat masala (for extra flavor)
- Fresh coriander leaves for garnish
Instructions:
Prepare the Eggplant:
- Wash and cut the eggplant into 1/4-inch thick round slices.
- Sprinkle salt over the slices and let them sit for about 10-15 minutes. This helps to remove any bitterness and excess moisture from the eggplant.
- Pat the slices dry with a paper towel.
Marinate the Eggplant:
- In a bowl, mix turmeric powder, red chili powder, cumin powder, coriander powder, and a little salt (remember the eggplant already has some salt).
- Coat each eggplant slice with the spice mixture evenly. If using, you can add a pinch of sugar to the mix for a slight sweetness.
Fry the Eggplant:
- Heat mustard oil in a pan over medium heat. Mustard oil adds a traditional flavor, but you can use vegetable oil if preferred.
- Once the oil is hot, carefully place the eggplant slices in the pan. Do not overcrowd the pan; fry in batches if necessary.
- Fry the slices until they are golden brown and crisp on both sides. This usually takes about 3-4 minutes per side, but timing may vary depending on the thickness of the slices.
- Remove the fried eggplant slices and place them on a paper towel to absorb excess oil.
Serve:
- Arrange the Begun Bhaja on a serving plate.
- If desired, sprinkle a little chaat masala over the top for extra flavor.
- Garnish with fresh coriander leaves.
Tips:
- Serve Begun Bhaja hot with steamed rice and dal for a traditional Bengali meal.
- You can also enjoy it as a side dish with any main course or even as a snack.
