🥬 Palak Kofta Curry

🛒 Ingredients

For the Kofta:

  • 2 cups fresh spinach (palak), finely chopped

  • 1 cup boiled potatoes, mashed

  • ½ cup grated paneer (optional but recommended)

  • 2–3 tbsp besan (gram flour)

  • 1 green chili, finely chopped

  • ½ tsp ginger paste

  • ½ tsp garam masala

  • ½ tsp cumin powder

  • Salt to taste

  • Oil for deep frying

For the Gravy:

  • 2 tbsp oil or ghee

  • 1 tsp cumin seeds

  • 1 large onion, finely chopped

  • 1 tbsp ginger-garlic paste

  • 2 tomatoes, pureed

  • ¼ tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp red chili powder

  • ½ tsp garam masala

  • 8–10 cashews (soaked & blended to paste) or 2 tbsp fresh cream

  • 1 tsp kasuri methi (crushed)

  • Salt to taste

  • 1 cup water (adjust as needed)

  • Fresh cream & coriander leaves for garnish

👩‍🍳 Method

Step 1: Prepare the Kofta

  1. Wash spinach thoroughly. Blanch in hot water for 2 minutes, then squeeze out excess water and chop finely.

  2. In a bowl, mix spinach, mashed potatoes, paneer, besan, green chili, ginger paste, spices, and salt.

  3. Form small balls.

  4. Heat oil and deep fry on medium heat until golden brown.

  5. Remove onto paper towels and set aside.

👉 Tip: If the mixture feels loose, add a little more besan.

Step 2: Prepare the Gravy

  1. Heat oil in a pan. Add cumin seeds and let them splutter.

  2. Add chopped onions and sauté until golden brown.

  3. Add ginger-garlic paste; cook until raw smell disappears.

  4. Add tomato puree, turmeric, coriander powder, red chili powder, and salt. Cook until oil separates.

  5. Add cashew paste (or cream) and cook 2–3 minutes.

  6. Add water to adjust consistency and simmer for 5 minutes.

  7. Add garam masala and crushed kasuri methi.

Step 3: Assemble

  • Just before serving, add koftas into hot gravy and simmer for 2 minutes.

  • Garnish with fresh cream and coriander leaves.

🍽️ Serving Suggestions

Serve hot with:

  • Butter naan

  • Jeera rice

  • Roti or paratha
