🥬 Palak Rice / Palak Pulao Recipe

Ingredients

➤➧1 cup basmati rice (washed & soaked 20 mins)

2 cups fresh spinach (palak), roughly chopped

1 small onion, thinly sliced

1–2 green chilies (adjust to taste)

1 tsp ginger-garlic paste

1 tbsp oil or ghee

Whole spices:

          ➧ 1 bay leaf

          ➧  1 small cinnamon stick

          ➧ 2–3 cloves

          ➧ 2 green cardamoms

½ tsp cumin seeds

½ tsp garam masala

Salt to taste

2 cups water

Optional: cashews, peas, or paneer cubes


Method

1️⃣ Make the palak paste

Blanch spinach in hot water for 1–2 minutes.

Transfer to cold water, then blend with green chilies into a smooth paste.


2️⃣ Temper & sauté

Heat oil/ghee in a pan or pressure cooker.

Add cumin seeds → whole spices → sliced onions.

Sauté till onions turn light golden.

Add ginger-garlic paste and cook till fragrant.


3️⃣ Cook the rice

Add palak paste + salt + garam masala. Cook 2–3 minutes.

Add drained rice, gently mix.

Add water and optional veggies.


4️⃣ Final cook

Pressure cooker: 1 whistle on medium, rest 5 mins

Pan: Cover & cook on low till rice is done

Rice cooker: Regular white rice mode


🌟 Tips & Variations

Add lemon juice at the end for freshness 🍋

For richer taste: finish with 1 tsp butter or ghee
