🥬 Palak Rice / Palak Pulao Recipe
Ingredients
➤➧1 cup basmati rice (washed & soaked 20 mins)
➤2 cups fresh spinach (palak), roughly chopped
➤1 small onion, thinly sliced
➤1–2 green chilies (adjust to taste)
➤1 tsp ginger-garlic paste
➤1 tbsp oil or ghee
Whole spices:
➧ 1 bay leaf
➧ 1 small cinnamon stick
➧ 2–3 cloves
➧ 2 green cardamoms
➤½ tsp cumin seeds
➤½ tsp garam masala
➤Salt to taste
➤2 cups water
➤Optional: cashews, peas, or paneer cubes
Method
1️⃣ Make the palak paste
➤Blanch spinach in hot water for 1–2 minutes.
➤Transfer to cold water, then blend with green chilies into a smooth paste.
2️⃣ Temper & sauté
➤Heat oil/ghee in a pan or pressure cooker.
➤Add cumin seeds → whole spices → sliced onions.
➤Sauté till onions turn light golden.
➤Add ginger-garlic paste and cook till fragrant.
3️⃣ Cook the rice
➤Add palak paste + salt + garam masala. Cook 2–3 minutes.
➤Add drained rice, gently mix.
➤Add water and optional veggies.
4️⃣ Final cook
➤Pressure cooker: 1 whistle on medium, rest 5 mins
➤Pan: Cover & cook on low till rice is done
➤Rice cooker: Regular white rice mode

➤Add lemon juice at the end for freshness 🍋
➤For richer taste: finish with 1 tsp butter or ghee
