HOW TO PREPARE Broccoli Poriyal / Thoran
Broccoli Poriyal / Thoran (South Indian Stir-Fry)
This is a simple, healthy South Indian-style broccoli stir-fry made with fresh coconut. It pairs well with steamed rice, rasam, sambar, or chapati.
Ingredients (Serves 3–4)
- 1 medium broccoli (about 300–400 g), cut into small florets
- ½ cup freshly grated coconut
- 1 small onion, finely chopped (optional)
- 2–3 green chilies, slit or chopped
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal (optional)
- 8–10 curry leaves
- ¼ tsp turmeric powder
- Salt, to taste
- 2 tsp coconut oil (or any cooking oil)
Optional Thoran Spice Mix
Grind coarsely:
- ½ cup grated coconut
- 1–2 green chilies
- 1 tsp cumin seeds
- 1–2 cloves garlic (optional)
Method
- Wash and cut the broccoli into small florets. If the stems are tender, peel the tough outer layer and chop the inner stem.
- Heat coconut oil in a pan. Add mustard seeds and let them splutter.
- Add urad dal and chana dal. Fry until lightly golden.
- Add curry leaves, green chilies, and onion (if using). Sauté until the onion turns translucent.
- Add turmeric and broccoli. Sprinkle 2–3 tablespoons of water, cover, and cook for 4–6 minutes until just tender. Avoid overcooking so the broccoli stays bright green.
- Add salt and the grated coconut (or the prepared coconut-cumin mixture). Mix gently and cook uncovered for 1–2 minutes.
- Switch off the heat and drizzle a little extra coconut oil on top for authentic Kerala-style flavor.
Tips
- Don't boil the broccoli beforehand—it cooks quickly in the pan.
- Keep the florets slightly crisp for the best texture.
- You can add a pinch of black pepper or crushed red chili flakes for extra heat.
- A squeeze of lemon at the end adds freshness, though it's optional.
Serve hot with steamed rice and sambar or rasam, or as a side with chapati or dosa.
